Voor een opdracht van een bruidstaart werd me gevraagd om iets met sinaasappelsmaak te vervaardigen. Omdat sinaasappel niet het eerste is wat in mij opkomt als ik ga bakken, was dit een leuke uitdaging met nieuwe smaken te werken. Ik besloot om een sinasappelcurd te maken. De meeste van jullie kennen de variatie van citroen: de lemoncurd. Ik besloot er een gebrande meringue topping op de spuiten omdat ik van de curd een hoeveelheid eiwitten over had. Een efficiënte en overheerlijke combinatie.

For an assignment of a wedding cake I was asked to make something with an orange flavor. Because orange is not the first thing that comes to mind when I'm baking, this was a fun challenge to work with. I decided to make an orange curd, like some of you might know the variant lemon curd. I decided to make a meringue topping for on the cakes, since I had some egg whites left from the curd recipe. An efficient but delicious combination.

I realized that I still have not shared a recipe for the basic cupcakes yet. Thats why I closed it in with this recipe. The bright orange curd I made from fresh orange juice. Along with meringue cake it's a great combination of three structures and a delicious sweet taste.

Basisrecept Vanille Cupcakes:
Ingrediënten:
• 125 g roomboter op kamertemperatuur
• 125 g kristalsuiker
• 125 g zelfrijzend bakmeel
• 2 eetlepels melk op kamertemperatuur
• 2 eieren op kamertemperatuur
Bereidingswijze:
- Zorg dat alle ingrediënten op kamer temperatuur zijn.
- Verwarm de oven voor op 170 graden.
- Zet een cupcake blik met daarin papieren bakvormpjes kla ar.
- Doe de boter in een kom en mix op middelmatige snelheid met een staande mixer of een hand mixer totdat er een lichte en luchtige massa ontstaat.
- Voeg de suiker beetje bij beetje toe en mix alles goed door zodat de suiker helemaal word opgenomen door de boter.
- Voeg nu 1 voor 1 de eieren toe en blijf mixen tussendoor zodat elk ei goed word opgenomen in het botermengsel.
- Voeg het zelfrijzend bakmeel beetje bij beetje toe en mix tot een glad geheel.
- Als laatste voeg je de melk toe en mix je nog eens 1 minuut alles goed door elkaar.
- Vul de cupcake vormpjes tot 2/3 vol met het cupcake beslag.
- Bak de cupcakes 20-25 minuten in de oven en test met een prikker of de cakejes gaar zijn. Open de ovendeur niet in de tussentijd, anders zakken de cupcakes in.
- Eenmaal uit de oven laat je de cupcakes even een minuut in het bakblik zitten. Na een minuut haal je de cupcakes voorzichtig uit het bakblik en kunnen ze verder afkoelen.
Sinaasappel curd:
Ingrediënten:
• 130 g suiker
• 1 1/2 eetlepel Maizena
• snufje zout
• 2 theelepels geraspte sinaasappelschil
• 160 ml verse Jus 'd Orange
• 2 eetlepels verse citroensap
• 4 grote ei dooiers (bewaar het eiwit voor de meringue topping)
• 1 groot ei
• 50 g roomboter in kleine blokjes
Bereidingswijze:
- Mix In een middelgrote pan de suiker, maïzena en zout.
- Voeg de sinaasappelrasp, sinaasappelsap en citroensap toe in het pannetje.
- Breng het mengsel aan de kook op matig vuur, blijf ondertussen roeren tot het geheel kookt en laat 1 minuut doorkoken totdat het wat dikker en doorzichtiger word.
- Meng ondertussen in een andere kom de ei dooiers en het ei met elkaar.
- Giet al roerend 1/4 van het hete sinaasappel mengsel over de eieren. Niet stoppen met roeren anders stollen je eieren.
- Haal de pan van het vuur.
- Gooi het eimengsel langzaam en al roerend bij de rest van de gekookte Jus 'd Orange
- Voeg de boter toe en roer totdat deze geheel is gesmolten.
- Giet het mengsel in een kom en dek af met plasticfolie, druk de folie tegen het mengsel aan zodat er geen vel aan de oppervlakte ontstaat tijdens het afkoelen.
- Laat de curd minimaal 2 uur afkoelen in de koelkast, maar een heel nachtje is nog beter.
Meringue topping:
Ingrediënten:
• 125 g eiwit
• 25 g suiker
• 225 g suiker
• 75 ml water
Bereidingswijze:
- Klop de eiwit en suiker samen op met de klopper in de machine tot mooie losse vlokken.
- Laat de suiker en water koken in een pannetje op medium hoog vuur tot 120°c.
- Giet het suikermengsel heel langzaam en voorzichtig bij het eiwitschuim. Zorg dat je mixer op een lage stand staat ander schiet de hete suiker je om de oren, en geloof me dat is heel heet.
- Blijf nu mixen op hoge snelheid tot dat de kom aan de buitenkant is afgekoeld, dit kan wel 10 minuten duren.
- Schep het schuim in een spuitzak of lepel het op een cupcake.
- Brand met een creme brullee brander het schuim voorzichtig af tot een caramelbruin kleurtje.

Basic Recipe Vanilla Cupcakes
Ingredients:
125 g butter at room temperature
125 g caster sugar
125 g self-raising flour
2 tablespoons milk at room temperature
2 eggs at room temperature
Preparation:
- Make sure all ingredients are at room temperature.
- Preheat the oven to 170 degrees.
- Put a cupcake pan containing cupcake paper tins ready.
- Put the butter in a bowl and mix at medium speed with a standing mixer or a hand mixer until light and airy.
- Add the sugar gradually and mix well until sugar completely get absorbed in the butter.
- Now add the the eggs one by one and continue mixing in between each egg.
- Add the flour gradually and mix until smooth.
- Finally add the milk and mix your additional 1 minute.
- Fill the cupcake tins 2/3 full with the cupcake batter.
- Bake the cupcakes for 20-25 minutes in the oven and test with a skewer if the cakes are done. Do not open the oven door in the meantime, the cupcakes wil fail and collapse.
- Once out of the oven let the cupcakes sit a minute in the pan. Remove them after a minute and let them cool down further.
Orange Curd
Ingredients:
• 130 g granulated sugar
• 1 1/2 tablespoon cornstarch
• a pinch of salt
• 2 teaspoon grated orange zest
• 160 ml fresh orange juice
• 2 tablespoons fresh lemon juice
• 4 large egg yolks (reserve whites for meringue)
• 1 large egg
• 50 g butter in small cubes
Preparation:
- In a medium saucepan mix the sugar, cornstarch and salt.
- Add the orange zest, orange juice and lemon juice into the pan.
- Bring the mixture to a boil over medium heat, keep stirring while the mixture cooks and let it boil for 1 minute until it becomes thicker and more transparent.
- Meanwhile, mix in another bowl the egg yolks and egg together.
- Pour 1/4 of the hot orange mixture over the eggs while stirring. Do not stop stirring otherwise the eggs will solidify.
- Remove the pan from the heat.
- Throw the egg mixture slowly back in the pan and still keep on stirring
- Add the butter and stir once more until the butter is completely solved.
- Pour the mixture into a bowl and cover it with plastic foil, press the foil against the mixture surface.
- Let the curd rest and cool down for at least 2 hours in the refrigerator, but a whole night is even better.
Meringue Topping
Ingredients:
• 125 g egg whites
• 25 g granulated sugar
• 250 g granulated sugar
• 75 ml water
Preparation:
- Beat the egg whites and sugar together with the whisk in until pretty loose flakes.
- Let the sugar and boil some water in a saucepan over medium-high heat to 120 ° C.
- Pour the sugar mixture very slowly and carefully at the protein foam. Make sure your mixer on low state another shoot the hot sugar your ears, and believe me that is very hot.
- Keep on mixing at high speed until the bowl is cool on the outside, this may take 10 minutes.
- Spoon the foam into a piping bag or spoon it on a cupcake.
- Fire with a burner foam gently until a caramel tan.
