I've been off-line for a while and noticed that my last post was over a half year ago. Shame on me!
I filled my summer with wonderful trips and fun parties. My website has even been offline for a while, but I can assure you everything including myself are “back in business”.
Ik wist niet wat ik meemaakte. Ik hoor weleens dat je eens in de 7 jaar veranderd van smaak, maar was dat het moment dan? Want in minder dan een minuut was ik fan, FAN VAN KOKOS, YEAH! De volgende dag ben ik een grote zak met kokosbollen gaan halen.

Last summer, I visited a food market. There was a delicious fresh baking smell in the air I was drawn to. It turned out to be a food truck with freshly baked coconut cookies. I can tell you that I was sorely disappointed, because there is nothing I like about the taste of coconut. Still, I could not walk away from the smell and after some twisting and turning I bought a cookie. One with dark chocolate pieces. I had no idea what happenend in my mouth. I heard that your taste changes once every seven years. Was this that moment? Because in less than a minute I was a fan, FAN OF COCONUT, YEAH! The next day I went back to the market to get a big bag of coconut cookies.

But the time of many food markets is declining. To find the fresh coconut cakes is more difficult. I had not made the effort to search the Internet for a recipe, but then suddenly there was culy.nl. They shared an article under the name "Sweet Saturday”. It was the recipe for Coconut Cookies from Rutger van den Broek. The first winner of the famous show ”Heel Holland bakt”. A dutch version of the show “Great British Bake Off”. He shared his recipe on Culy in honor of his new book "Bakbijbel" which contains more than 160 recipes. I knew what I had to do and that was making these cookies asap.

The recipe is surprisingly simple, but because of my blog absence I would like to give you a movie with the instructions instead of a written one. So this recipe can be made fairly quick. It took me almost the whole day so that I could make some good shots. In fact the cookies I’ve worked on the whole entire day were burned in the oven because I wasn’t paying attention... but a new load of cookies, right back in the oven and I was back in business. It's my first edit and I'm very aware of things I could’ve done better the next time. But practice makes perfect ... The cookies on the other hand did not taste
any less!
