For me another good reason to celebrate, and what is a celebration without cake, or in this case cupcakes?
For me this recipe is a new addiction and very dangerous because this recipe is so easy to put together.
Last year there was a street fair in town with only foodstalls. Really my place to be!
The sun was shining and I walked past a stall where much excitement and noise came from.
The stall was from ABC, American Baking Company.
"ja ikkuuuh!" Zonder schaamte. Ik was niet van plan dat laatste stuk op te geven. Een stuk of 10 mensen bekeken mij met grote jaloezie en teleurstelling in hun ogen, want ik kreeg het! Het laatste-stukje-beste-die-ik-ooit-gegeten-heb-pecan-pie.
Dit incident inspireerde mij om tussen Sinterklaas en Kerst nog een klein recept te maken die niets met beide feestdagen te maken heeft. Hoewel de voorbereiding voor een kerstartikel op mijn blog al van start is gegaan, wil ik eerst dit recept met jullie delen.

One of the guys behind the counter was standing out because he was loud, funny and American. He was helping his clients when I sneaked into the crowd to see what he sold. And there it was! Right In front of my nose. So close. A ray of sunlight focusing precisely on that last bit Pecan Pie. Before I knew it, he lifted the piece of cake and shouted: "Who wants the last piece of pecan pie?" Although there were four people standing before me I yelled: "yes me me me!" Without any shame. I was not going to give up that last part. The result was that ten people looked at me with great jealousy and disappointment in their eyes, because I really did get the last piece. The last-piece-best-that-I-ever-have-eaten-pecan-pie.
This incident inspired me to make a little recipe that has nothing to do with the holidays. While the preparations for a Christmas article on my blog already started, I want to share this recipe with you guys first.
In English:
Pecan Pie Cupcakes. I've named them "cupcakes" because I made a frosting on it. Without the topping they are just as tasty and you can call them "muffins", which is fine as well. What I haven't done and would have liked to do is to pour a dash of maple syrup over the topping. I think this it's a good combination with the pecan nuts. But still without the syrup they were delightful.
• 180 gr licht bruine basterdsuiker
• 65 gr bloem
• 200 gr klein gehakte pecannoten (ongezouten)
• 160 gr roomboter
• 2 middelgrote eieren
Bereidingswijze:
- Verwarm de over voor op 180 graden.
- Vet een cupcakevorm in met boter of leg de bakcupjes erin.
- Meng in een kom met een mixer de suiker, bloem en pecannoten.
- Meng in een ander kom de boter en de eieren tot een geheel.
- Voeg de droge ingrediënten bij het boter/ei mengsel en mix samen tot een beslag.
- Lepel het beslag tot 2/3 van de cups in de vorm.
- Bak de cupcakes in ongeveer 15 minuten af. De bovenkant moet mooi goudbruin zijn.
- Laat de cupcakes een paar minuten afkoelen in vorm totdat ze eruit kunnen en verder kunnen afkoelen.
Ingrediënten cream cheese frosting:
• 100 gr roomboter
• 200 gr naturel roomkaas
• 400 gr poedersuiker
Bereidingswijze:
- Mix de boter licht en luchtig
- Voeg de roomkaas toe en mix samen met de boter voor ongeveer 3 minuten
- voeg de poedersuiker toe tot er een stevige frosting ontstaat.

Ingredients Cupcakes:
• 180 gr light brown sugar
• 65 gr flour
• 200 gr chopped pecans (unsalted)
• 160 gr butter
• 2 medium eggs
Preparations:
- Preheat the oven to 180 degrees.
- Grease a cupcake pan with butter or place the baking cups in it.
- Mix in a bowl with a mixer the sugar, flour and pecans.
- Mix in another bowl the butter and eggs into one.
- Add the dry ingredients to the butter / egg mixture and blend it together into a batter.
- Spoon the batter to 2/3 of the cups in the pan.
- Bake the cupcakes for about 15 minutes. The top should be golden brown.
- Let the cupcakes cool a few minutes in the pan until they are no longer bloody hot and let them cool further on a rack.
Ingredients Cream Cheese frosting:
• 100g butter
• 200 g cream cheese
• 400g icing sugar
Preparations:
- Mix the butter, light and airy.
- Add the cream cheese and mix with the butter for about 3 minutes.
- Add the icing sugar until you have a firm frosting.
